Homemade Pancake Recipe

2 tablespoons sugar
21/2 teaspoons baking powder
1/4 teaspoon salt
¼ cup of quick cooking oats
1 cup milk
2 tablespoons butter, melted
1 large egg
1 tablespoon apple sauce
2 teaspoons of vanilla extract
¼ cup semisweet chocolate chips, optional

Another Option - S’more Pancakes

You can substitute the oats for crumbled graham crackers. And soften a marshmallow in the  microwave to put on top of the pancakes once they are ready.

Mix together all dry ingredients first and then add the wet ingredients. Mix all ingredients together until a little lumpy. 

Heat skillet to 375 degrees. Butter skillet and then spoon ¼ cup of batter onto skillet.  Cook until pancakes have some bubbles and a couple of burst.  Flip pancakes over and cook until the underside is browned. You can keep cooked pancakes on a plate covered with foil, in the oven to keep them warm while you finish cooking the rest of the pancakes.  Before pouring more batter onto the skillet each time, you will need to apply more butter.  This will keep the pancakes from sticking to the skillet.  Serve warm with syrup or any other topping of your choice.
